Operations Update

Our mission is to delight every guest of Scramblers by impressing them with unique breakfast and lunch recipes and attentive friendly service in a clean, dynamic yet comfortable environment.

 

NEW INFORMATION

  1. Our coronavirus response – As everyone is aware, the general public is in a current state of heightened fear and anxiety as a result of the World Health Organization declaring the spread of the coronavirus a world-wide pandemic and Governor Mike DeWine ordering all full-service dine-in restaurants to close. In spite of our attempts to maintain carry-out sales in the first part of this week, we elected to close most Scramblers and City Egg locations until further notice.  While we have asked most of our employees to file for unemployment compensation benefits, it is critical that they understand that upon the opening of the restaurants in short time, they will have a job with Scramblers.  This makes them our number one priority.  If General Managers expect to open their restaurant and operate as normal upon the lifting of this closure, the most critical thing that they can do is stay in constant contact with their Scramblers employees!  DO NOT go several days without speaking to your staff.  Ensure them that we will need them back and encourage them to stay committed to Scramblers through this difficult time.  Scramblers is not going anywhere.  We will endure this difficult time and thrive when it is past us.  However, we need our employees!  Managers, please stay connected to your staff.  Call, and text regularly.  Find out how they’re doing.  Maintain a close relationship with all of them.  We will need them in just a few weeks!
  2. Closing Stores – If you have not already completed the closure of your restaurant please consider the following list to help with a successful prolonged closure:
    1. Prepare for a thorough cleaning.
    2. Shut off Door-Dash.
    3. Consolidate thawed product into a single unit so unused units can be unplugged for energy conservation.
    4. Take a thorough inventory of your product.
    5. Place as many items as possible in the freezer to include yogurt, cream cheese, sour cream, butter blend, margarine, cheeses after being transferred to zip lock freezer bags, avocados, bread, diced meats, whipped eggs and any other items that will be preserved and not destroyed by freezing.
    6. Any items that are certainly perishable, we would recommend that you distribute to our staff as a gesture of goodwill.
    7. Place a sign on the front door to notify guests we will be re-opening soon.
    8. Turn off all unneeded utilities. Open the doors of any refrigeration equipment that will be left unplugged.
    9. Throw away any product that will encourage pests.
    10. Turn off and open your ice machine to allow it to drain so that you may conduct a deep cleaning at some point during the closure
    11. Make periodic visits to the restaurant to inspect its condition and cycle equipment to keep it operational every few days.
    12. Deposit all cash into the bank.
    13. Secure all valuable items such as your laptop.
  3. Upon reopening – The following is a list of precautions that Scramblers took before the closing that we would like to reiterate as part of our operations upon the reopening of the restaurants:
    1. All bussers and food-runners will wear gloves throughout their shift both in the dining room and in the kitchen.
    2. Maintain hand-sanitizer stations with signs in all restaurant lobbies.
    3. At our request, Great Lakes Hamco will be providing all crayons in individually wrapped packs of four. Staff should discard used crayons after single use and provide new to all guests.  Do not collect used crayons and re-distribute to guests in other-wise unsanitary containers.  This will be a permanent policy change.
  4. Scramblers Menu Guide – During our closure, we will be working on a full and accurate update of the Operations Manual to include the three books that make up the Scramblers Menu Guide (Cook Book, Recipe Book, and Prep Book). Once complete, we will publish in the Library in the Coop and print out a full color, hard-bound copy for every Scramblers restaurant.  You can expect your copy shortly after the re-open.

RECURRING TOPICS

  1. Yogurt Parfait – From the Management training summit a few weeks ago we discovered several discrepancies with how stores are packaging carry-out yogurt parfaits. The correct container to use is the black carry-out bowl.  Not the fruit cup.  The recipe book in the Operations Manual in the Coop has been updated to reflect this.
  2. Downtown Turkey – We have made a recipe change to the Downtown Turkey. This sandwich currently calls for avocado slices.  Based on demand, practicality, cost, flavor, and quality we have decided to change this to avocado spread.  Please note the changes in the Cook Book and Recipe Book of the Operations Manual.  Please note that the photo has not yet been updated, but will be soon.
  3. Orlando Bread – Due to significant ongoing issues with service and product, we have been working with Orlando Bread and GFS to change our existing bread distribution system. We have elected to begin to take all Orlando Bread products frozen distributed through GFS.  Beginning sometime after our re-opening we will make this change to frozen bread.  You will work with GFS to order bread and have it delivered to you on GFS truck deliveries in frozen form to be held in your freezer and slacked out as necessary.  While this method gives our restaurant managers more control and better product, it will require a more active role in our bread program.  We anticipate much fewer mold issues, better consistency of product, and less logistical turmoil in the future.
  4. The Shop – One of our biggest short-comings with encouraging staff to be in proper and clean uniforms at all times is the staff’s struggle to order uniforms in the Coop. We provide ‘The Shop’ in the Coop as a way to order uniforms, but find that few servers take advantage of this.  One of the issues is that they often don’t have or can’t remember their log-in or passwords to the Coop.  Therefore, we have decided to create an additional location on-line where anyone can order Scramblers uniforms.   5. Scramblers App – The ‘Promotions’ tab of the Scramblers app has been updated with a new offer. Be prepared to honor $2 Off the beverage of your choice when this offer is presented.
  6. Online Job Applications – You asked and we listened! At the managers training last week, it was a consistent theme that all stores need more applicants to help staff their store.  As a result, we have created a new way to apply to work at Scramblers.  For many years the only way to apply to Scramblers was to print out a hard-copy application and hand-deliver it to the restaurant.  Last week we created an on-line application for ease and convenience of the restaurants and our future team-members.  Online applications can be found under the ‘Careers’ tab on our website.  Future team members will be asked to select a location.  This will allow the application to be sent directly to the General Manager, District Manager and Franchisee’s email.  It is then the responsibility of the General Manager to reach out to the applicant to set up an interview.

OPERATIONS MANUAL CHANGES

  1. Food Preparation – Two changes have been made to the Recipe Book and Cook Book in the ‘Food Preparation’ folder of the Scramblers Operations Manual:
    1. The yogurt parfait carry-out container has been changed from the fruit cup to the black bowl.
    2. The Downtown Turkey is now made with avocado spread rather than sliced avocados.
  2. W4 update – We have published the new 2020 w4 IRS withholding form in the ‘New Employee Packet’ chapter in the Operations Manual on the Coop. Please use the updated w4 form when hiring new employees.
