- Upcoming Holidays – As we look ahead to the next couple of weeks, please keep the upcoming holidays and major events in mind while writing schedules. This includes this Superbowl Sunday, February 13. This is traditionally a much slower sales volume Sunday. Staff appropriately. Monday, February 14 is Valentines Day, though this should have little to no affect on Monday’s sales; and Monday, February 21 is Presidents Day, which is a national holiday. This means that many banks and businesses will be closed and schools will not be in session. Prepare for a busy day at that time.
RECURRING TOPICS
- New china – We have been working with Tri-Mark to get our new china and begin the long process of replacing the old. Obviously, the process of getting all of the new pattern in has been a long series of disappointments. However, we now have a new ordering system and catalog from Tri-Mark and are beginning to see most of the new china available for purchase. We have begun replacing some locations with the new pattern. Most of the new china is self-explanatory one-for-one replacements of our old china; however, we will be publishing a supplemental guide and eventually a new cookbook with proper plate presentations once most restaurants have completed the change-over.
