Operations Update, July 15, 2022

NEW INFORMATION
- Kids Menu – We have updated the Kids Menu to a new design. Be advised, there are no changes to the prices or offerings. As always, Great Lakes Hamco will print and house the cases of these new menus that you will receive when you place an order directly through them.
RECURRING TOPICS
- Baking Powder – Reminder that our Red Star Baking Powder is being discontinued. This will make for a difficult transition for us because our substitute baking powder, Clabber Girl, reacts in a different manner. Therefore, we will have to adjust our pancake recipe to get us the same great pancakes that our guests know and love. We are working to refine our recipe with the new baking powder and will publish the new recipe in the Cookbook in the Operations Manual on the Coop as soon as possible.
- Sales Trend – When staffing your restaurant over the next several weeks, consider the sales trend that usually occurs in the second half of the summer, post Independence Day. You should expect to see a dip in sales until Labor Day weekend. Please consider your individual restaurant’s trend when writing schedules and controlling labor costs.
