RECURRING TOPICS
- Fall LTO – Our Fall LTO Menu began this past week. The attached link is the digital version of the Product Prep Guide. One note to consider is the size of the whole pecans from GFS. While the bag of pecans is both whole and pecan pieces, chopping these to get a more consistent group of small pieces often just turns the pecans into dust. The best way to break up the largest of the whole pecans is by taking a small hammer to the outside of the bag a few times. Consider this only when absolutely necessary. Fall LTO Product Prep Guide
- New Menu – Our newest Scramblers full menu is currently in production. We have decided to take a small menu price increase in order to stay ahead of our rising business costs while remaining market competitive. While considering all options for this new menu, we conducted the necessary market research and menu engineering to make it as successful as possible. We’ve done market analysis and looked closely at the velocity reports to make certain decisions as to what new items should be added to the menu (just one) as well as what items should be eliminated. As you will see, this is an even more stream-lined menu designed to offer a good mix of both eclectic and staple items, while being even more operationally efficient. Because this menu will be in stores in the coming weeks, we’ve decided to highlight the items that will be removed from the new menu so that GMs and cooks can appropriately manage their inventory levels and avoid ordering products for items that will no longer be in use by mid-October. Aside from recategorizing, price increases and other changes, the following is the list of items that will not make the next menu:
- Lean & Green Omellette
- Southwest Frittata
- Sunrise Sprouts
- Steak & Eggs
- Berry Nutty Pancakes
- Cinnamon Oatmeal Pancakes
- Pecan/ Blueberry waffles
- Veggie Quinoa
- Harvest Benny
- Downtown Turkey & Avocado
- Fiesta Chicken Salad
- One & One petite portion salad
