- Sales Volume Trends – Be advised, as the busiest quarter for our company comes to an end culminating in a strong Independence Day week, managers should now begin to look closely at their schedules to reduce labor where possible. In mid to late summer people take vacations and travel and the next major holiday isn’t until Labor Day. For this reason, we run our late summer promotion and are looking forward counterbalancing slower sales weeks with a strong promotion. This season is a good opportunity to pay close attention to controllable expenses in your restaurant.
