Operations Update

Our mission is to delight every guest of Scramblers by impressing them with unique breakfast and lunch recipes and attentive friendly service in a clean, dynamic yet comfortable environment.

 

NEW INFORMATION

  1. New Menus – New menus are in the final stages of production. They will be delivered to all stores for a ‘go-live’ date of Wednesday, October 16.  Your digital cookbook has already been updated with the necessary changes including the addition of the ‘Shareables’ category.  Videos showing the proper preparation of these new items will be added as well for even more clarification.  Attached is a Product Prep Guide for the ‘Shareables’ category.  Menu Changes PPG
  2. Menu Products – Two new items will be required for the new menu. If you have not done so already, please order the Hot Pepper Bacon Jam from GFS as shown in the Product Prep Guide.  Also, a dozen of the new ‘shareables’ boards have already been ordered and will be delivered to all locations in the next couple of days.  If you do not receive yours by Thursday, Oct 10, please contact Tim immediately.
  3. Allergens Disclaimer – Be advised, when you get the new menu you will see a disclaimer that is a new health department requirement. This is to let guests know that we have certain allergens in the building that may affect some guests.  Little needs to be done here, but the staff needs to know in case our guests have any questions.
  4. Holiday Season – We are only a few short weeks away from our holiday season. Please look for your Holiday Hours signs and have them ready to place in your lobby.  Here is a brief list and synopsis on what sales volume to expect as it compares to normal sales so that you may staff appropriately. Consider this as a general reference though; it is always wise to look at your individual store sales’ trends for exceptions:
    1. Columbus Day/ Indigenous Peoples’ Day (Monday, Oct 14) – Many municipalities do not recognize this as a federal holiday any longer (in conjunction with the recognition of Junteenth instead) and will therefore not impact sales as in years past. However, some do.  Check your local schools and government offices and adjust your sales expectations accordingly.
    2. Halloween (Thursday, Oct 31) – No change. However, if your staff chooses to dress in costumes on this day or often the Sunday before, this will be permitted (within good taste) and our social media team would love photos!
    3. Daylight Saving Time Ends (Sunday, Nov 3)- Up 25%
    4. Election Day (Tuesday, Nov 5) – Up 25 – 35% (Federal elections have more impact than local)
    5. Veterans Day (Monday, Nov 11) – Up 25 – 35% (Falling on a Monday will increase its impact)
    6. Day before Thanksgiving (Wednesday, Nov 27) – Up 20%
    7. Thanksgiving Day (Thursday, Nov 28) – In many locations volume is the same as a normal Thursday, but condensed to only 4 hours, as we are only open 8am-Noon.  Makes for a busy rush, so be prepared!
    8. Black Friday (Friday, Nov 29) – Very busy.  Up 75-150% from a normal Friday.  Sometimes even busier than Saturday or Sunday of that weekend.
    9. First three weeks of December sales volumes begin to dip. Don’t over-staff!
    10. Christmas: The week leading up to Christmas Day (whenever the kids get out of school; probably Dec 29 or 20 this year) begins to get busy.  Each weekday is 50-75% up on a normal weekday.  Christmas Eve will be on Tuesday, Dec 24 and will feel like a busy Saturday.  We are closed Wednesday, Dec 25 Christmas Day (only day of the year) and then Thursday, December 26 will be like a busy Sunday, and the 27th – 31st will be the equivalent of Saturday-like sales.  We often set weekly sales records during this week.  No one-single day is like a ‘Mother’s-Day-kind-of-busy’, but each day is busier than normal, which makes for an over-all busy week.  You will want as much staff available throughout this week as possible.
    11. New Year’s Eve (Tuesday, Jan 31) – Expect busy Saturday-like sales.
    12. New Year’s Day (Wednesday, Jan 1) –Other than Thanksgiving Day, this is the only day of the year that our hours change because we open late.  Hours are 8am-3pm. Consider this day like a busy Saturday.  Business will start slow, but a strong late morning and lunch rush should be expected.
    13. Business will then stay strong through the balance of the weekend and then fall off on Monday, Jan 6.  At that point, cut staff and start cleaning!

  1. Social Media – The October social media calendar is here! As always, if you are interested in you or your restaurant being featured in our on-line media campaign, please contact Kelly directly!
  2. New Cookbooks – We are excited to announce, our new Cookbooks are here! If you have not yet received yours, it’s on its way in the next couple of days.  The big change?  Cookbooks are now digital!  That’s right, your new cookbook is a lime-green tablet with the entire cook and prep books loaded on them with real-time updates.  These are cloud-based and will be always up-to-date!  When a change gets made, it will automatically be updated in your new tablet.  Put them in your kitchen and use them to make sure your cooks are preparing our Scramblers food as the recipes are written and to the highest of Scramblers standards!
  3. Hash Brown Seasoning – Operations Change! After several weeks of testing, we’ve decided to make an official change to our preparation of hash browns. Our new Standard Operating Procedure for hash browns is seasoning!  Just like potatoes, all hash browns should be seasoned when they are placed on the grill.  Best method is with a dredge that is porous enough to allow parsley flakes through, but not an excessive amount of salt, pepper and other seasonings.  All stores should begin immediately.
  4. Gift Boxes – One of our Franchise operators requested a way to sell gifts for the upcoming holiday season. Therefore, we have put together holiday gift boxes!  These are designed to be very small, easy gifts for our guests to purchase and give to friends and family during the holiday season.  We have put together an SOP for these boxes and will be publishing in the coming weeks!
