- Daylight Saving Time – Be advised, Sunday March 9 Daylight Saving Time begins! This means that we roll clocks forward losing an hour. Please consider this when staffing as restaurants don’t get busy until later than usual on Sunday morning.
- Eggs Pricing – Be advised, because the market remains very fluid, we have been given conflicting reports on egg futures. Some buyers indicate the beginning of an inventory surplus which is causing the price of eggs on the Urner Bery Market to fall for the first time last week, while Gordons Food Service has indicated shortages on Medium eggs. Therefore, we have adjusted our egg purchasing plan. We’ve added XL eggs as a line item so that stores who may be worrying about a medium egg shortage can buy XL eggs to be used for liquid eggs, reducing the number of medium eggs necessary in any given restaurant. Please consider purchasing XL eggs for liquid eggs only and medium eggs for cracked eggs (OE, OM, OH, etc.).
