- Volume Trends – Be advised, the last few weeks of December can tricky when writing schedules. Historical trends usually indicate a slower season until just a few days before Christmas when volume starts to pick up. Christmas and New Year’s Day fall on a Monday this year. Please look closely at previous years’ sales trends to know what to expect and how to staff. Be careful not to overstaff during the slow days of December or understaff during the Christmas break.

- Gift Card Audits – It’s gift card selling season. Unfortunately, this also means that if managers are not reconciling gift card sales and redemptions at the end of every day, we become exposed to potential theft. We are sad to report that while conducting corporate audits of gift card sales we have already discovered and terminated one individual for this infraction. Managers, you should be verifying gift cards sold and redeemed by reconciling the server’s Dinerware report against the gift card terminal report at the end of every shift. License holders, you should be requesting the gift cards sold and redeemed report directly from Vantiv and reconciling that report against the weekly recap to verify the accuracy of those numbers. Also, if your gift card terminal does not have a password lock required to activate or load cards, you should activate that feature. You may contact corporate for details on how to activate that on your gift card terminal. Finally, a second password lock feature is also available to activate on your gift card terminal that will prevent a server from accidentally using the gift card terminal as a back-up credit card processor. Stores should be using the ‘square’ as a back-up credit card processor. Using the gift card terminal only for gift cards keeps Vantiv costs way down. Accidentally using it even once as a credit card processor will activate several fees. Please contact corporate to learn how to activate these password locks.
